Hoa Binh Province (Tỉnh Hòa Bình)

The next post i will introduce About Vietnam is Hoa Binh Province (Tỉnh Hòa Bình). It is a mountainous place in the North. It is bordered by Phu Tho and Ha Tay in the north, Ninh Binh and Thanh Hoa in the south, Ha Nam in the east, and Son La in the west. The topography is combined by mountains and narrow valleys. The annual average temperature varies between 23 and 25oC.

Tourism:
 
The culture of Hoa Binh combines several ethnic groups with their own languages, traditional literature, and festivals. Tourists especially enjoy the ethnic specialty dishes including rice cooked in bamboo and grilled meat. At night, visitors can stay in stilt houses at Lac Village in Mai Chau Valley, enjoy watching traditional dancing, music performances (bronze drums, gongs), and Thai minority singing and dancing. The remote Muong, Dao, Tay minority villages draw visitors who like study the life of ethnic groups. Beautiful brocade and forest products are interesting souvenirs.

Mountainous terrain with Thac Bo, Hoa Tien grottoes, Ret Cave, Pu Nooc Primitive forest and many clean springs are suitable for swimming, climbing, walking, and hunting. Visitors are also fascinated by superb beauty of Hoa Binh Hydroelectric Power Plant, the largest one in Vietnam. Boating on Da River is an enjoyable feeling. Apart of these, scientific tests have shown that the mineral water at Kim Boi Hot Spring is good for drinking, bathing and treatment.

300gr sliced beef
200gr pea fruit

Process:

Step 1: Boil the water. Next, add all rice pasta into pot and boil until they are soft. Pour on basket, wash immediately through cold water to make sure they will not stuck together. Wait to dry.

Step 2: Clean beef, and slice thinly. Marinate with 1 little salt, pepper and oyster oil. Mix well and wait about 15 – 20 minutes.

Step 3: Clean pea fruits, strip the hard lines on 2 sides. Clean again and wait to dry. Peel off the cover of onion, slice small.

Food for Luna New Year in Vietnam (part 1)

Luna New Year or Tet Holiday is an important and sacred time of Vietnamese people. Today I would like to introduce some Traditional Vietnamese Food  in Northern, Middle and Southern Vietnam at this time. I hope this post can help you to find some ideas for your own Tet Holiday. In this post, I will instroduce 3 best dishes in Northern Area for you guys. 

1. Pickled Welsh Onion (Muối Củ Hành)

For the long time, this Traditional Vietnamese Food has existed in every Vietnamese’s meals in Luna New Year. It is quite easy to make, so I would like to guide you how to make it in this article. Firstly, you have to collect the old welsh onion, hard and then cut away its tail, only keeping the roots. Next, you mash them in the ash water which includes borax in 2 days and 2 nights.

After that, pick up and take off the roots and the crust of them. Following, put into one box and then adding some salt. Remember, you have to can the box carefully, do not let the wind go inside. After 2 weeks, you can take them out and put into another box. In this new box, pour the vinegar sugar together. Next 3 days, you can enjoy it.

2. Frozen Meat: (Thịt Đông)

Frozen meat is a typical food of Northern Area. However, it is considered one of most Traditional Vietnamese Food due to it has a long history and existing every Luna New Years’ time. The main ingredient of this style of food is pork. The making of this food is easy, but it is quite weird.

Firstly, cooking it till the meat is soft and then put the pot outside the door for one night. Remember, closing the cap carefully, does not anything go inside it. At the next day, you will have one delicious frozen food.

3. Stewed Beef with Cinnamon: (Bò Kho Quế)

I do not have a chance to enjoy this food. So I cannot describe the tasty of this food. However, I searched some information to make this food.

To make it, you need to choose the encrusted beef. Next chilled it with garlic’s water, fish sauce and salt and then put the pork inside it. Rolling it and tied it hardly. Next, frying it in some second and then stewing it carefully in the pot. Then, putting the beef in the hot water includes some soya bean, sugar and some cinnamon. Till the meat is soft, you can take it out and enjoy it.

Lao Cai Province (Tỉnh Lào Cai)

Today, I would like introduce you Lao Cai  Province (Tỉnh Lào Cai) to help you understand more About Vietnam. Located in North-West Vietnam, Lao Cai is surrounded by Yunna (China) on the north, Lai Chau Province on the west, Ha Giang Province on the east and Yen Bai, Son La provinces on the south.

Lao Cai's terrain is divided into main kinds following: valley, low and high mountainous. With 3,143m in height, Fansipan is considered the highest peak of the Indochina Peninsula. The province has 107 rivers including Red, Chay and Nam Mu rivers... The province also owns 31 types of mineral, of which apatit, cooper, iron are most valuable.

The remarkable feature of Lao Cai is biologic diversification. There are 2,000 kinds of flora, 442 kinds of birds and animals... of which 60 kinds of animals only found in Lao Cai, 9 kinds of floras only found in Sapa. So that Lao Cai owns a treasure of valuable and rare genes, making up 50% rare floras in Vietnam.

Lao Cai has typical mountainous climate. The dry season lasts from October to March, it is cold. And the rain season is from April to September. Annual average temperature is 23oC. Specially, sometime, there is snow in Sapa.

Tourism:

Lao Cai preserves lots of special cultural and historical sites. Outstanding vestiges is ancient stone engrave area with picture of map, handwriting, people thousand years ago in Muong Hoa Valley (Sapa), Pho Rang vestige. There are many beautiful caves like Thuy Tien (Bat Xat), Ta Phoi (Cam Duong), Tien-Trung Do (Bac Ha), Xuan Quang (Bao Thang).

Lao Cai is very proud of Sapa, a unique natural tourist site. Many new married couples like spending their honeymoon in Sapa because of good weather and romantic sightseeing. Visitors to Sapa in summer can feel the climate of four seasons in one day. They enjoy discovering other interesting places including Ham Rong Mountain, Silver Waterfall, Rattan Bridge, Bamboo forest, Ta Phin Cave and Sapa ancient rock field. In addition, Bac Ha Market hosts the biggest fair near the mountainous highlands. It is a typical weekly activity for the H'Mong and other minority groups living in the locality. In Cat Cat Village many H'Mong residents are good at manipulating gold and silver jewelry.

It is festinate to travel from Lai Chau to Lao Cai following National Highway No. 4D because of scenery along roadsides and impressive sight of Hoang Lien Son Range. This way attracts to people liking the adventure and discover on bicycle, too.

Ethnic groups:

Lao Cai has a colorful culture of 27 ethnic groups. They are Kinh, H'Mong, Tay, Dao, Thai, Giay, Nung, Phu La, Ha Nhi, Lao, Khang, La Ha, Muong, Bo Y, Hoa, La Chi, San Chay, San Diu, Khmer, Lo Lo, Ka Doong, Pa Co, E De, Gie Trieng, Gia Rai, Cham, Ka Tu. The life of minority people groups base on planting rice on the paddy, on the fields in the mountains or on terraced field.

Festivals here are very special including Pray for good crop, Spring Mountain, and Long Tong festivals. There are many merry games such as Nem Con, tug-of-wars, and cockfights. The specialty food of Lao Cai mostly comes from the nature. So you need to take one tourist guide to help you find out these foods. They are stream fish, mushrooms, herbs, corn cake, etc.

Son La Province (Tỉnh Sơn La)

Today, I will continue to introduce about Food for Lunar New Year in Vietnam for your guys. I will tell some specific Traditional Vietnamese Food in 2 left areas in my beautiful country. Hue’ s Sour Shrimp (Tôm Chua)

Sour shrimp is selling widely around in not only Vietnam but also some country like Thailand. However, Huế’s sour shrimp is the best Traditional Vietnamese Food. In just one food, you can taste the sweet fleshy of shrimp, the fat and delicious of meat, spicy of chili, garlic, sour of star fruit and wine of banana. All of it will bring the Tết’s flavor to you. The making of this food is quite difficult, so I suggest the best way is go to the supermarket and buy one.

1) Pickled Bean Sprouts (Dưa Giá):

This Traditional Vietnamese Food is an unforgettable food of southern residents. It is more delicious if you eat it with stewed meat or girdled-cake. In Luna New Year’s Day, every food is fatty and oily, so pickled bean sprouts are a food that balances them.

2) Pickled Chinese Scallion (Củ Kiệu):

You can buy pickled scallion heads everywhere like supermarket, store, but I think making it by yourself is better. Firstly, mashing it in the ash water for one night, next clean and take away the roots and leaves. Then, drying them for next 4 hours and then chilling it with sugar. Finally put them in the pot for next 10 days. To make them is more colorful and beautiful; you can add some dried carrot.

To sum up, from north to south, each area has their own specific food which can not replace. The people who lives in these areas can not forget flavor of Traditional Vietnamese Food when you live apart, even in another countries. They try to find them for eating, especially in Tet Holiday when every members in family has a chance to see and share everything together.

Dong Thap Province (Tỉnh Đồng Tháp)

The next post in menu About Vietnam, Dong Thap Province (Tỉnh Đồng Tháp) is on the Mekong Delta, one of three Dong Thap Muoi provinces. It shares its border with Cambodia on the north, Vinh Long Province and Can Tho City on the south, An Giang Province on the west and Long An, Tien Giang provinces on the east.

Dong Thap has quite developed system of canals for watery transportation and irrigation. The province has about 10,000 hectares of forestland. Cajuput is specific tree of Dong Thap Muoi region. There, the system of fauna and flora are multiform with many valuable kinds: tortoise, turtle, snakes, fishes, shrimps, pythons, storks, birds, rice, lotus, water lily, grass, and alga especially red headed cranes.

Climate: 
 
The province has tropical climate, plentiful fresh water in the whole year-round, rich and populous land with verdant fruits trees in all four seasons. Hau Giang Province (Tỉnh Hậu Giang)

Next post About Vietnam, I will introduce about Hau Giang Province (Tỉnh Hậu Giang). It belongs to Mekong Delta. It borders with Can Tho City, Vinh Long Province on the north, Bac Lieu Province on the south, Soc Trang Province on the east, and Kien Giang Province on the west. Hau Giang is located on complicated network of rivers, springs, and canals such as: Hau, Cai Tu rivers, Quan Lo, Phung Hiep, Xa No, Xang Nang Mau canals.

The climate is harmonized with few of storms. It is hot, humid all year. Rainy season lasts from May to November, and dry season lasts from December to April. The annual average temperature is 27oC.

Tourism and Economy:

Hau Giang has advantage of growing rice and fruit tree as well as rearing aquaculture. The province is famous for Phung Hiep Floating Market. From seven branches of Mekong River, hundreds boats join in floating market to sell various fruits and other things like other market. The name 'Phung Hiep snake market' is well-known to foreign tourists. Visitors from over the world come to that market to taste snake liquor and to see the dangerous snake dance.

An Giang Province (Tỉnh An Giang)

From many places About Vietnam, you may know An Giang Province (Tỉnh An Giang) is located to the west of the Mekong Delta between the Tien and Hau rivers and shares a 100km border with Cambodia in the north- west. It also shares border with Dong Thap Province in the east, Cantho City in the south-east, and Kien Giang Province in the south-west.

An Giang has two main types of topography: midland areas and low mountains. The low mountains is Bay Nui (Seven Mountains) in Tinh Bien and Tri Ton districts. Vinh Te Tunnel runs along with the province's border in the west, which connects from Chau Doc to Ha Tien.

Climate: 

An Giang is divided into two seasons: the rain (from May to November), and the dry (from December to April next year). The annual average temperature varies 27oC. The highest temperature is 35oC- 37oC from April to May and the lowest ones is 20oC- 21oC from December to January next year. The annual rainfall is 1,400-1,500mm.

Tra Vinh Province (Tỉnh Trà Vinh)

Ba Om Pond is an attraction of Tra Vinh. It is surrounded by hillocks and many old sao and dautrees with odd shape of roots. In the afternoon, flocks of birds perch on the trees and make this area exciting and noisy. 

There are 140 pagodas of Khmer, 50 pagodas of Viet (Kinh) and 5 pagodas of Hoa. The famous ones include Ang, Sam-rong-ek, Co, Hang. Co Pagoda is home of thousands of birds including storks, Cong coc and pigeons.

Quang Binh Province (Tỉnh Quảng Bình)

Quang Binh is one of province is well known of charming landscape of mountain and sea in the North area. Located in North-Central Vietnam, Quang Binh Province is surrounded by Ha Tinh Province on the north, East Sea on the east, Laos on the west and Quang Tri Province on the south.

Soc Trang Province (Tỉnh Sóc Trăng)

Today, in the list About Vietnam, I would like to introduce Ba Ria-Vung Tau Province (Tỉnh Bà Rịa Vũng Tàu). It is located in the Southern Vietnam, to the northeast of the Mekong Delta. It shares its border with Dong Nai Province to the north and Binh Thuan Province to the east, Ho Chi Minh City to the west and East Sea to the south - east.

Nghe An is located on the North East of Truong Son range, with complicated topography, divided by hills, mountains, rivers and streams slanting from North-West to South-East, the highest peak is Pulaileng (2,711m) in Ky Son district, the low areas are Quynh Luu, Dien Chau, Yen Thanh districts and the lowest one is Quynh Thanh commune in Quynh Luu district with the altitude of 0,2m above the sea level. Mountainous and hilly lands cover 83% natural area of the whole province.
 
Climate:

The province is located in the tropical monsoon area, directly affected by the South West hot dry seasonal winds (during April- August) and the North East wet and cold seasonal winds (during November- March). The annual average temperature varies between 23oC and 24oC.
